
Fluffy Bunny coffeeshop hops into Ravinia district in Highland Park
Easter Sunday has passed, but a Fluffy Bunny is sticking around.
Fluffy Bunny coffeeshop debuted in early April at 545 Roger Williams Ave. in Highland Park’s Ravinia neighborhood.
A concept from couple Izabela Plotkina and Konstantin Iziumets, of Buffalo Grove, Fluffy Bunny serves Julius Meinl coffee, as well as noncaffeinated herbal coffee and mushroom coffee, teas, and sugar-free lemonade, among other options.
The health-focused offerings continue on the food menu, where sugar-free and gluten-free pastries are abundant. Included are a Fluffy Bunny special: syrniki, a pancake-like dish made from Amish cheese, eggs and rice flour. Waffles, salads, croissants and more are also available.
The owners, a Jewish family from Belarus, immigrated to the United States two years ago. They have long owned and operated a marketing agency with restaurants, including coffeeshops, as clients. Plotkina said it was “kind of a dream” to open their own coffeeshop.
The location wasn’t a difficult choice, said Tim Iziumets, the owners’ son and store manager.
“We really love it here,” he said. “We were driving across (the area) and saw the place was free and contacted the property manager. We really love it.”

Fluffy Bunny is open daily from 7:30 a.m.-3:30 p.m., and a grand opening celebration will be in May.
The shop’s name, Plotkina explained, comes from its offerings. She said “bunny” represents a consumer of natural foods, like her shop serves, and “fluffy,” another word for light, describes the offerings.
Plotkina and company have extended the “bunny” theme to the store’s decor. The shop’s light-filled and modern interior features rabbit cutouts, stuffies, playful signage and more.
The display case is filled with house-made and sugar-free chocolates, as well as other bites.
The “soft opening,” as Plotkina described it, has gone “better than we expected,” she said. Look for some menu changes going forward as Plotkina has noted “everyone is hungry” when they visit the shop.
She also said Fluffy Bunny will in the near future host events after the shop closes. She mentioned theme nights, such as an Italian evening featuring music, tiramisu and bruschetta.
